I. INTRODUCTION:

Together with improvements in various aspects of life in Vietnam today, the foodservice industry is considered one of prime fields which brings quite a great deal of profits and market shares to business people as well as providing for customers a heap of meals- related choices which help them discover nice and comfortable menus as well as enjoy their life with professional service after working hard.

Located in the heart of Ho Chi Minh City's vibrant business and entertainment district in Vietnam, Nutrient Food Restaurant is a haven of convenience, connecting guests with their colleagues and friends and above all, supplies healthy and low-fat meals for customers which help them improve health, limit heart- related diseases together with cancers.

II. NAME AND LOCATION OF THE RESTAURANT:

There are so many reasons leading to the idea establishing Nutrient Food Restaurant. Firstly, according to Robert & Magnus (2004), 75% of young adults in Australia, United Kingdom and the United States have eaten fast food frequently which is believed one of prime causes leading to overweight, coronary heart disease and hypertension, (p.4). Secondly, there have been quite the amount of campaigns focusing on healthy foods such as "Treat Yourself Well" healthy dining campaign which attracts the operation of four restaurant chains in San Diego (Acharya, Patterson, Schmitz, Foerster, Hill, Jones and Bohm, 2002, p.2). This restaurant focuses on bringing fresh, healthy and low-fat foods to customers and supports "green food" campaigns and that are the reasons why its name is Nutrient Food.

Location has an positive effect on restaurant which can make a restaurant with the means to be successful decrease profits if it is not based on convenient place (Dumas, 1998). Moreover, Tzeng, Teng, Chen and Opricovic (2002) found that location plays the most important role in the success of a restaurant (p.52). Indeed, they offered 11 criteria used to evaluate the quality of a location which refer to cost, convenience, size of parking space, competitors and size of the commercial area, (p.54). As a result, it is very good idea for managers to open the restaurant on a busy street with constant foot traffic where so many people can come in to see when walking or driving (Sandlin, 2007). From all reasons showing above, Nutrient Food Restaurant is located on 4A Ton Duc Thang Street, District 1, Ho Chi Minh City, Vietnam where gathers criteria as well as possible about the quality of a restaurant's location.

III. A LA CARTE MENU:

A la carte menu is one of three menu types in foodservice industry (Table'd hote menu, Banquet menu and A La Carte menu) which shows a series of individual priced dishes , usually cooked to order , within the classical framework. As for Mooney (as cited in Thomson, 2006), the menu item categories should be designed as follow: starters, main courses, vegetable and salads, desserts and special items (p.50). On the other hand, the healthy menu needs to ensure the criteria of nutrition which contains at least two fruit and/or vegetables servings per meal, less than 30% calories from fat or less than 20 gram of fat (Acharya, Patterson, Schmitz, Foerster, Hill, Jones and Bohm, 2002, p.5). From all things mentioned above and for the purpose of providing low-fat or low-calorie food choices as well as fresh, green and healthful meals, the A La Carte menu of Nutrient Food Restaurant is offered as follow:
