One thing that this class has taught me is how many nutrients and vitamins we need on a daily basis just to help our body complete its daily processes. When I began to study what I was eating and how I could help my body function smoother and more efficiently, I came to a simple conclusion. To help my body become more efficient at processing food and burning calories, I needed to feed it the correct foods. I needed to consume more green vegetables and fresh fruits, and also consume more lean and high protein meats. It was amazing to me that all these foods not only helped with bodily digestive functions, but also aided in nervous system, muscle and cardiac functions in our bodies. Since I was eating a fairly healthy diet already, all I had to do was to tweak my food consumption just a little. When I am at work I tend to eat a tad bit less healthy. This is not easy to understand, since I have all the healthy foods at my disposal. I do after all, manage a restaurant. I guess the allure of eating like the truckers I feed got to me. Now it was time to focus on eating the correct foods at the right time.

One thing that was apparent to me was that when I eat with my family, we eat a fairly balanced diet. We consume lean meats and green vegetables on a daily basis. However we do not consume many fresh fruits at all. When my son started having issues with his digestive system and was later diagnosed with Irritable Bowel Syndrome (IBS), we found that fresh fruit was one of the main culprits that caused his pain. We found information that showed if fresh fruit was eaten with other foods or less than twenty minutes before consuming other foods; it did not digest properly and would rot in the digestive system and cause gas, excess acid and pain. This is caused by the high sugar content in fruits. With this in mind, I began to research what foods would cause excess gas, acid and become difficult to process. I came across an article written by a Sherry Breschia (Breschia, 2009). She was a medical researcher for an insurance company for over fifteen years, and herself a sufferer of IBS. We ordered the plan and low and behold it worked. The way that this plan works is that it combines foods that lower acid in the body and raise the body's ph level. Since our bodies are supposed to operate on a higher ph level and a lower acid level, this plan worked very well. We even took my son off of the medication that his gastroenterologist put him on to help with the cramps and pain associated with this condition. The plan is really very simple.
