RATIONALE AND BACKGROUND OF THE STUDY

        One thing that can be distinguished to us Filipinos is eating along-side-streets. Regardless of the time, space, and economic status, from all walks of life, they all meet up at one place eating street foods. One of the street foods that are popular nowadays is “Empanada”.

        The word “Empanada” is derived from the Spanish word “Empanar” which means to wrap or to coat in bread. The empanadas are made by folding dough or bread around stuff, which usually consists of a variety of meat, cheese, vegetables, among others. With a cook book published on 1520, in Catalan, named “Libre del Coch” written by Ruperto de Nola, empanada start to its original recipes together with other dishes.

        However, in different countries like Latin Europe, Latin America, the Southwestern United States and some parts of Southeast Asia, empanadas are being popular.

        In Philippines, especially in Ilocos, they have their own version of empanadas: Vigan empanada in Ilocos Sur and Batac or Laoag empanada in Ilocos Norte. Both ingredients of variety are the same but they have different thickness of crust. But most of the time, the Vigan empanada is what people preferred to eat.

Empanadas had become a common delicacy among Filipinos because even you’re rich or unfortunate, old or young you can enjoy the taste of it. It may be least expensive and most accessible means of obtaining a nutritionally balanced meal outside home.

General Objective

This study focuses on the condition of the innovative food in its designation area. The General Objectives of this business is to establish a profitable business and earn money. Secondly, to satisfy the customer’s needs and wants. Thirdly, to promote personal business interest and to create income that contributes to the community. Last objective is to become a successful business.

Specific Objective

The Specific Objectives of this business is to change the perception of the people about the traditional Empanada. Second is to increase the awareness of customers on the different way or new way that empanada can introduced. It can provide a ready to travel food.

I. TECHNICAL ASPECTS

A. Preparation

        The food cart will be putting in San Pablo City shopping mall and we are preparing to distribute the product there. Selling of the product will be in the people who are fun of eating empanada that are passing in the area.

Making Dough of Cream Dory Empanada:

In preparing the dough of Cream Dory Empanada first, mix the flour and salt. Add the pieces of butter and add water to start and then add more as needed or until dough clumps begin to form. Form a ball with the dough and knead lightly. Place the dough in bowl, cover and let rest at room temperature for about an hour. Roll out the dough into a thin sheet and cut out round disc shapes for empanadas (use round molds or a small plate). It’s really important to get the discs very thin since they cook very quickly when you fry them, if after cutting out the round shapes they are still thick, try rolling each disc a little more until it is very thin. Another way to do this is to make small round balls with the dough and then use a rolling pin to roll out each one individually. Use immediately or store in the refrigerator or freezer to use later.

Making the Filling Cream Dory Empanada:

While dough is in the refrigerator heat some oil in a pan. Chop up the onions and garlic and put into the pan. Add the Cream Dory fish fillet. Then, mix the carrots, potato and other ingredients to the pan.

Procedure in Frying Cream Dory Empanada:

In frying the empanada, heat the pan with oil. Then, stuff the empanada dough wrappers. Fold over, forming a semi circle. Place the folded empanada in the pan until it cooked.

B. Implementation

In putting up a business, it’s not only the product or service to be produced; the target market; the type of business and the size of the business must be considered. Also there are different documents or permits that must be appreciate to inquire in the local government by the entrepreneur whether it is a small or big enterprise in order to a business legally. These documents, especially permits may help the entrepreneur to assure the customers that the business is under the requirement of the local government before the business starts.

        In securing our business permits we need to register first our business name with the Department of Trade and Industry. After we register the name of the business we will secure the barangay clearance. Next is the application for mayor’s permit to operate within the chosen locality and securing of municipal license. Registration for Securities and Exchange Commission is also needed for a business. After we registered our business to SEC we can proceed in obtaining a Tax Identification Number in the Bureau of Internal Revenue. To secure the employees of any business we need to register our business with the Social Security System for their benefits. For the safety of our business we will register it to the fire safety and other safety precautions. These are the permits that needed for our business to be legal.

C. Product description

                The history of Cream Dory Empanada started in a circle of friends with the same interest in eating the traditional empanada. That is the reason why that circle of friends came up in introducing innovative product by using traditional empanada such as meat as a main ingredient into empanada with a Cream Dory fish as a main ingredient. Empanada focused in offering a Cream Dory Empanada with healthy and appetizing empanada. It is a complete little meal composed of Cream Dory fish as a main ingredient together with its extenders such as carrots, potatoes, mushroom, and green peas to make it cheaper and wrapped in dough.
